Why is a conical bottom important for olive oil?
Olive oil naturally contains microscopic solids (lees) that settle over time. If left at the bottom, these can ferment and spoil the oil’s flavor. The conical shape concentrates these sediments at the lowest point, allowing you to purge them easily without disturbing the rest of the batch.
Can I use nitrogen or argon with this tank?
Yes. While the tank comes standard with a DN50 relief valve, you can replace it with an optional Inert Gas Fitting. This allows you to blanket the oil with nitrogen or argon, displacing oxygen and preventing the oxidation that causes rancidity.
Is the inert gas fitting included in the base price?
No. The inert gas fitting is an optional upgrade designed for producers who want maximum shelf life. The standard equipment includes the DN50 relief valve, which is sufficient for basic pressure equalization.
How do I clean the tank between harvests?
Thanks to the BA (IIId) mirror-polished interior, the stainless steel surfaces are exceptionally smooth. This prevents oil and residue from sticking, allowing for a fast and thorough cleaning process with standard food-grade detergents.
