Punch-Down Fermenter with Pomace Ejection

Punch-Down Fermenter with Pomace Ejection

Designed for large-scale production, the Wineficator Romat with Automatic Pomace Ejection starts at a minimum capacity of 12,000 liters. This is a heavy-duty vinification system built to handle the immense pressure and volume of professional harvest cycles.

At this scale, efficiency is driven by the high-torque geared motor located at the base of the tank. This powerful drive system operates the internal discharge blades, ensuring that even several tons of spent skins are ejected smoothly and without interruption. Combined with the automated pneumatic pigéage system, this tank allows large-cellar operations to achieve boutique-quality extraction at an industrial pace.

  • Scalable Volume: Starting at 12,000L, engineered specifically for high-capacity wineries and commercial juice extraction.

  • Heavy-Duty Geared Motor: A powerful, industrial-grade motor drives the bottom blades, providing the torque necessary to eject massive volumes of pomace through the discharge doors.

  • 20° Rotational Suppressor: The three-blade pneumatic impeller prevents “cap channeling” by rotating 20° with every stroke, ensuring uniform color and tannin extraction throughout the entire 12,000L+ volume.

  • HELI Cap Irrigation: Integrated high-flow rotating sprinkler ensures the large surface area of the pomace cap is consistently and evenly saturated.

  • Vertical Cooling Technology: The vertical dimpled jacket ensures that even during the most vigorous fermentations, temperature remains stable and yeast-friendly across the entire liquid column.

Frequently Asked Questions

How does this system reduce the need for manual labor in the cellar?

By automating both the extraction (pigéage) and the discharge (pomace ejection), the Romat transforms a multi-person job into a one-person operation. The machine handles the physical stress of breaking the cap and shoveling the skins, allowing your team to focus on the technical side of winemaking and quality control.

In high-capacity fermenters, the pomace cap is a massive, dense layer. A standard vertical punch-down will simply hit the same spots, creating “holes” or channels where the juice flows through without extracting anything. By rotating 20° with every stroke, the Romat ensures the blades strike a fresh section of the cap every time, working the entire surface for a more complex and balanced wine.

Manually unloading a large-scale fermenter is a bottleneck in the cellar. Our high-torque geared motor drives internal blades that mechanically push the spent skins through the discharge door. This “problem-free” ejection allows you to empty the tank in a fraction of the time, letting you start the next batch immediately.

Yes. The blades are designed to rotate at a controlled speed to sweep the pomace out rather than grinding it. This prevents the extraction of harsh, bitter seed tannins during the final unloading phase, maintaining the quality of your press wine.

Yes. The geared motor is specifically selected for its high torque. It is powerful enough to break through and move even the densest, driest pomace caps that have settled after a long maceration period, ensuring a smooth flow toward the conveyor or collection bin.
