The Wineficator Romat with Spoon Bottom is the ultimate solution for winemakers who prioritize both high-quality extraction and rapid tank turnover. This specialized punch-down fermenter combines the power of automated pigéage with an ergonomically curved base.
The Spoon Bottom geometry is specifically designed to work in tandem with the internal rotating paddles, ensuring that pomace is funneled directly toward the discharge doors with zero “dead zones.” This unique feature significantly reduces the time and manual effort required for pomace ejection, making it the most efficient fermentation vessel in the Letina lineup.
Rotational Pneumatic Suppressor: The three-blade impeller breaks up the pomace cap and rotates 20° on every stroke, ensuring uniform tannin and color extraction across the entire surface area.
Spoon Bottom Geometry: The curved, spoon-shaped base eliminates corners where solids typically collect, allowing for the fastest and most complete pomace discharge on the market.
HELI Cap Irrigation: An integrated rotating sprinkler provides consistent soaking of the marc, offering both punch-down and pump-over capabilities in one unit.

What are the advantages of a Spoon Bottom over a standard sloped bottom?
The Spoon Bottom is a deep, curved base that eliminates the sharp angles where pomace usually gets stuck. This “funnel effect” makes the ejection of skins and seeds much smoother. When paired with the bottom rotating paddles, it allows for a nearly 100% clean-out with minimal manual intervention.
Does the Spoon Bottom affect the fermentation process itself?
While it doesn’t change the chemistry of fermentation, it improves homogenization. The curved base allows for better fluid dynamics when using Impulse Mixing or pump-overs, ensuring that the temperature and yeast distribution remain consistent throughout the entire volume of the tank.
Why do the suppressor blades rotate 20° each time?
This is a critical feature for high-quality red wine production. By rotating 20° on every press, the pneumatic suppressor avoids “channeling”—the tendency for juice to follow the same path through the cap. This ensures that the entire cap is mechanically worked, resulting in maximum flavor and aroma extraction from the marc.
Is the Spoon Bottom model more expensive to clean?
Actually, it is easier to clean. The absence of sharp angles at the base of the tank means there are fewer places for tartrates or organic residues to build up. This makes the CIP (Clean-in-Place) process much more effective, saving you water and chemicals between batches.
Can this tank be customized for high-corrosion environments?
Yes. While AISI 304 is our standard, we offer upgrades to AISI 316L stainless steel. This is highly recommended for producers working in coastal areas or those using specific cleaning protocols that require higher chemical resistance.
