The Letina Pump-Over Fermenter with Spoon Bottom is a high-efficiency vessel engineered to optimize the extraction process during red wine fermentation. By combining automated remontage with a specialized “spoon” geometry, this fermenter ensures maximum color and tannin extraction while simplifying the labor-intensive task of pomace discharge. Designed for professional winemakers, it offers a fully integratable solution for automated, consistent cap management.

  • HELI Rotating Sprinkler: Provides a gentle, uniform soaking of the pomace cap, ensuring balanced extraction and preventing “channeling” during the pump-over process.

  • Integrated Sieve System: A built-in high-surface sieve effectively separates solids from the liquid, preventing pump clogs and ensuring a clean remontage cycle.

  • Spoon Bottom Geometry: The unique spoon-shaped base is specifically designed to facilitate the rapid and effortless ejection of pomace after fermentation.

  • Automation Ready: Can be equipped with advanced control systems to fully automate the timing and frequency of the pump-over cycles.

How does the HELI sprinkler improve wine quality?

Unlike static splash plates, the HELI rotating sprinkler distributes the fermenting must across the entire surface of the cap. This even saturation prevents dry spots and acetic acid buildup, leading to superior color extraction and a more refined tannin profile.

The spoon bottom is engineered for the “dry” phase of the process. Its specific curve allows the pomace to slide toward the discharge door more efficiently, significantly reducing the manual labor required to empty the tank after the wine has been racked.
