Tapered Fermenter

Tapered Fermenter

The tapered conical wine fermenter is a stainless steel tank designed for red wine fermentation, especially for winemakers who prefer manual punch-down (pigéage). Its tapered conical shape helps maintain stable fermentation temperatures and makes working the pomace cap easier during maceration.

A large top manhole provides quick and comfortable access for manual punch-downs, giving winemakers greater control over the fermentation process.

The tank can also be equipped with a pump-over system, allowing techniques such as remontage and délestage. A large bottom discharge valve enables easy pump connection, making the fermenter suitable for multiple winemaking methods.

For easier cleaning and pomace removal, the tank includes a square manway door aligned with the sloped bottom. A mesh screen beneath the outlet valve helps prevent solids from entering the wine during transfer.

Frequently Asked Questions

What is a tapered conical wine fermenter used for?

A tapered conical wine fermenter is a stainless steel tank designed primarily for red wine fermentation and maceration. It is ideal for winemakers who prefer manual punch-down (pigéage), but it can also be adapted for white wine fermentation, clarification, and additional processing with optional equipment.

The conical (truncated) shape makes punching down the pomace cap easier and improves fermentation management. It is also thermally inert, helping the tank maintain stable temperatures during maceration and fermentation.

The fermenter can be equipped with advanced systems, including:

  • HELI rotating sprinkler for efficient pump-over distribution

  • Pneumatic impulse mixing for gentle bubble agitation

  • Pump-over systems for techniques such as remontage and délestage
These options make the tank highly versatile for different red winemaking styles.

Temperature regulation is achieved with a dimple cooling jacket, which circulates a medium such as glycol for efficient heating or cooling. The tank can also include a programmable touchscreen control panel to automate pump operation and temperature management.

The fermenter includes a large bottom discharge valve and a square manway door aligned with the sloped base, making pomace removal and cleaning easier after vinification. A mesh screen beneath the outlet helps prevent solids from entering the wine during transfer, ensuring cleaner processing.
