Pump-Over Fermenter
Pump-Over Fermenter
The pump-over fermenter is designed to simplify remontage and demontage during red wine fermentation. The HELI rotating sprinkler evenly distributes wine over the pomace cap, while a built-in sieve separates solids from liquid for efficient pump-over circulation. Optional automation can further streamline the process.
Additional systems improve mixing and discharge. Pneumatic agitation gently mixes the must with bubbles from the bottom of the tank, while rotating paddles help remove pomace after fermentation.
A touchscreen control panel allows precise control of temperature and pump cycles, ensuring consistent fermentation conditions.
The large dimple cooling jacket provides reliable temperature control, efficiently chilling the tank even when it is not filled to full capacity. The fermenter is built from high-quality stainless steel for durability and long-term winery use.

Frequently Asked Questions
What is a pump-over fermenter used for in winemaking?
A pump-over fermenter is a stainless steel red wine fermentation tank designed to simplify remontage (pump-over) and demontage (pomace removal). It allows wineries to efficiently circulate wine over the pomace cap during fermentation while maintaining precise temperature control.
How does the HELI rotating sprinkler improve pump-over fermentation?
The HELI rotating sprinkler is mounted on top of the fermenter and evenly distributes wine over the pomace cap during pump-over. This ensures consistent extraction of color, tannins, and aromas, improving fermentation efficiency and overall wine quality.
What systems help mix the must during fermentation?
The pump-over fermenter can include pneumatic impulse mixing, where devices at the bottom of the tank release short bursts of air. The rising bubbles gently mix the must, improving extraction while avoiding excessive mechanical agitation.
How is pomace removed from the fermentation tank?
After fermentation, rotating blades at the bottom of the tank help push leftover pomace toward rectangular discharge doors, making pomace removal faster and more efficient. This automated discharge system simplifies cellar operations during red wine production.
How does the pump-over fermenter control fermentation temperature?
The tank features a dimple cooling jacket that circulates a cooling or heating medium such as glycol. Combined with a programmable touchscreen control panel, winemakers can regulate temperature and pump cycles to maintain optimal fermentation conditions.
