The Wineficator Winematic is a specialized horizontal fermenter designed for the precise maceration of white wines, red wine vinification, and spirits production. Its horizontal geometry maximizes the contact area between the juice and the pomace cap, ensuring a more efficient and uniform extraction of color and aromatics.
At the core of the system is a high-torque geared motor driving a full-length anchor agitator. Controlled by a frequency inverter, the motor allows for adjustable, bi-directional rotation from 0 to 5 rpm. This ultra-slow, “low-shear” movement protects the fruit from mechanical damage and prevents the extraction of bitter seed tannins. The same agitator system is engineered to provide automatic pomace discharge, while the vertical dimpled jackets ensure reliable temperature control even at partial fill levels.

Frequently Asked Questions
Why is the horizontal design better for white wine maceration?
Horizontal tanks create a much thinner pomace cap with a larger surface area. This allows for faster “cold soaking” and more efficient extraction of delicate floral and fruit aromas, which is a major advantage for premium white wine production.
What is the benefit of the 0–5 rpm speed range?
Most mechanical stirrers move too fast, which can bruise the skins and break the seeds. By using a frequency inverter to drop the speed to just 1 or 2 rpm, you achieve a “gentle-hand” mixing effect that preserves the structural integrity of the grapes.
Does the automatic discharge work for heavy spirits mashes?
Yes. The high-torque geared motor is built to move dense solids. When set to discharge mode, the anchor agitator acts as a sweep, pushing the spent skins or grain mash toward the outlet for a fast, “no-shovel” clean-out.
